QUEEN CAKES

Introduction

These are bakery products basic ingredients are flour, shortening, eggs, sugar and milk.

Ingredients

Flour
Sugar
Eggs
Margarine
Baking Powder
Vanilla
Water

Procedure

The sugar-margarine cream was made by mixing all the sugar and margarine. The eggs are then added gradually as one continues to mix until a smooth is obtained. Finally the rest of the ingredients are added. The mixture is then put in queen cake pans lined with wrappers and baked at 180°c.
Discussion
Mixing is done properly to achieve uniform and complete mixture of all ingredients in the mix as well as incorporating in air. Sugar serves various purposes such as
1. Gives necessary sweetness
2. Used for icing of baked products(icing sugar)
3. Assists in creaming and whipping processes of mixing.
4. It adds nutritive value to the product.
5. Assists in retention of moisture with prolonged freshness
The ratio of flour to sugar affects the method of blending the sugar and other ingredients. Shortening is used to impact shortness, richness and tenderness. It also provides for aeration resulting in leavening. The egg yolk imparts desirable yellow color to the cakes. Eggs also contribute to flavour and palatability.
